WHAT IS CHICKPEA POWDER?

Chickpea powder, also called garbanzo bean flour or Bengal gram powder, comes from an annual legume in the Fabaceae family valued for its nutrient-rich seeds. Widely cultivated and consumed across India, Africa, Central and South America and other regions, chickpeas are an important dietary staple. The traditional roasted form of chickpea powder—often referred to as gram flour or besan—is made from the brown-skinned desi variety (also known as kala chana or Bengal chickpeas). The dark hulls are removed from dried chickpeas and the inner kernel is split and milled into flour. The resulting split product is commonly called chana dal, which can be confusing because “dal” also denotes lentils; the hulled and split desi chickpeas resemble yellow split peas or lentils.
